Corned Beef Brisket

Ingredients

Brining Ingredients

  • 12 cups water
  • 1 ½ cups Morton’s Coarse Kosher Salt
  • 4 cloves garlic, minced
  • ½ cup light brown sugar
  • 2 tablespoons pink curing salt
  • 3 tablespoons pickling spice
  • 3 to 4 pounds flat cut beef brisket

Cooking Ingredients

  • 1 tablespoon pickling spice
  • 2 bay leaves
  • 4 cloves garlic, peeled
  • 4 cups ice cubes

Instructions

  1. Prepare the brining liquid by combining water, kosher salt, garlic, brown sugar, pink salt, and pickling spice in a stockpot, and bring to a boil.
  2. Let the brining liquid cool for 30 minutes.
  3. Add ice to a large vessel and pour the cooled brining liquid over it.
  4. Submerge the brisket in the brining liquid and ensure it's fully covered. Brine for at least 5 days in a cool place.
  5. After brining, remove the brisket, rinse it, and pat it dry.
  6. Place the brisket in a stockpot, cover with water, and add garlic, bay leaves, and pickling spice.
  7. Bring to a boil, then reduce to a simmer and cook for about 3 hours until tender.
  8. Allow the brisket to cool for 10 minutes, then slice against the grain.
