Slow Cooker Brisket

Instructions
- 1. Heat olive oil in a large pan over medium-high heat and season the brisket with salt and pepper.
- 2. Brown the brisket in the pan for 6-8 minutes on each side.
- 3. Spray a large oval slow cooker with cooking spray and place the brisket inside.
- 4. Add onion, carrot, celery, Italian seasoning, garlic, bay leaf, beef broth, and ketchup to the slow cooker and stir to combine.
- 5. Cover and cook on low for 8 hours.
- 6. Remove the brisket from the slow cooker and strain the liquid into a saucepan.
- 7. Bring the liquid to a simmer over high heat for 5 minutes.
- 8. Whisk cornstarch with ¼ cup cold water in a small bowl and add it to the saucepan.
- 9. Cook for 1-2 minutes until the sauce thickens.
- 10. Slice or shred the brisket, pour the sauce over it, sprinkle with parsley, and serve.
