Slow Cooker Brisket

Ingredients

The brisket and seasoning

  • 1 piece beef brisket (3 ½ - 4 pounds, preferably flat cut)
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 2 teaspoons pepper
  • 2 teaspoons Italian seasoning
  • 1 bay leaf bay leaf

The vegetables

  • ½ cup onion (diced)
  • ¾ cup carrot (peeled, quartered and cut into ½ inch pieces)
  • ½ cup celery (sliced)
  • 5 cloves garlic (smashed)

The broth and sauce

  • 2 cups beef broth
  • ¼ cup ketchup
  • tablespoons cornstarch
  • 2 tablespoons chopped parsley

Miscellaneous

  • 1 spray cooking spray

Instructions

  1. 1. Heat olive oil in a large pan over medium-high heat and season the brisket with salt and pepper.
  2. 2. Brown the brisket in the pan for 6-8 minutes on each side.
  3. 3. Spray a large oval slow cooker with cooking spray and place the brisket inside.
  4. 4. Add onion, carrot, celery, Italian seasoning, garlic, bay leaf, beef broth, and ketchup to the slow cooker and stir to combine.
  5. 5. Cover and cook on low for 8 hours.
  6. 6. Remove the brisket from the slow cooker and strain the liquid into a saucepan.
  7. 7. Bring the liquid to a simmer over high heat for 5 minutes.
  8. 8. Whisk cornstarch with ¼ cup cold water in a small bowl and add it to the saucepan.
  9. 9. Cook for 1-2 minutes until the sauce thickens.
  10. 10. Slice or shred the brisket, pour the sauce over it, sprinkle with parsley, and serve.
