Slow Cooker Beef Brisket with Barbecue Sauce

Ingredients

The brisket

  • 4 lb beef brisket
  • 1 tablespoon olive oil

The dry rub

  • 1 tablespoon light brown sugar
  • 2 teaspoon sweet paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dry mustard
  • ½ teaspoon ground cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper

The barbecue sauce

  • 2 cloves garlic
  • ½ cup apple cider vinegar
  • cups ketchup
  • ½ cup light brown sugar
  • 2 teaspoon onion powder
  • 2 teaspoon chili powder
  • 1 teaspoon black pepper
  • 1 teaspoon dry mustard
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Mix the dry rub spices in a small bowl until well blended.
  2. Rub the dry rub into the brisket and refrigerate for at least an hour, preferably overnight.
  3. Combine barbecue sauce ingredients in the slow cooker and mix well.
  4. Place the brisket on top of the barbecue sauce in the slow cooker.
  5. Cook the brisket on low for 8 hours.
  6. Remove the brisket and pour the cooking liquid into a saucepan.
  7. Simmer the sauce over medium-high heat until it thickens.
  8. Brush olive oil on the brisket and place it in a preheated oven at 400°F for 15 minutes.
  9. Slather the brisket with barbecue sauce and return it to the oven for another 5 minutes.
  10. Remove, tent with foil, and let it cool for 15 minutes before slicing.
  11. Serve with additional barbecue sauce.
