Instructions
- Trim excess fat from the brisket and cut in half across the grain, seasoning both sides with salt and pepper.
- Sauté the brisket halves in olive oil until browned on both sides, then remove to a plate.
- Deglaze the pot with apple cider/juice, scraping the bottom to remove brown bits.
- Add onion, garlic powder, and liquid smoke to the pot and stir.
- Place the brisket halves in the liquid and pour chili sauce over them without stirring.
- Lock the lid in place, set the steam release knob to Sealing, and cook on high pressure for 90 minutes.
- After cooking, allow a 15-minute natural release, then vent any remaining steam.
- Check the tenderness of the brisket; if not tender enough, cook for an additional 10 minutes with a natural release.
- Remove the brisket and cover with foil.
- Turn the sauté function back on and stir in brown sugar, adjusting salt to taste.
- Mix cornstarch with cold water to create a slurry, whisk it into the simmering sauce until thickened.
- Slice the brisket against the grain and return the slices to the sauce to soak before serving.
