Ingredients

The brisket and cooking essentials

  • 4 lb beef brisket
  • 2 tbsp ghee (or coconut oil for dairy free)
  • 1 cup beef broth

The rub

  • 1 tbsp sea salt
  • 1 tbsp ground pepper
  • 1 tbsp chili powder
  • 2 tsp mustard powder
  • 2 tsp garlic powder
  • 2 tsp smoked paprika

The BBQ sauce

  • ½ cup coconut aminos
  • ¼ cup tomato paste
  • 2 tbsp white vinegar
  • 1 tbsp yellow mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • ½ tsp chipotle powder (optional)

Instructions

  1. Mix all rub ingredients in a bowl or jar.
  2. Cut brisket into smaller pieces if necessary and rub the seasoning mixture all over the brisket.
  3. Select 'Saute' on the Instant Pot and add ghee, coating the bottom of the pot as it heats.
  4. Sear each side of the brisket for about 3-4 minutes until browned.
  5. Remove brisket and deglaze the pot with beef broth, scraping the bottom.
  6. Return the brisket to the pot, secure the lid, and set to cook on high pressure for 75 minutes.
  7. Let the pressure naturally release for 15 minutes, then manually release any remaining pressure.
  8. While the brisket cooks, mix BBQ sauce ingredients in a bowl and refrigerate.
  9. Once cooked, let the brisket rest wrapped in foil for at least 10 minutes.
  10. Warm the BBQ sauce in the Instant Pot using 'Saute' if desired.
  11. Slice the brisket against the grain and serve with BBQ sauce.
