Instructions
- Mix all rub ingredients in a bowl or jar.
- Cut brisket into smaller pieces if necessary and rub the seasoning mixture all over the brisket.
- Select 'Saute' on the Instant Pot and add ghee, coating the bottom of the pot as it heats.
- Sear each side of the brisket for about 3-4 minutes until browned.
- Remove brisket and deglaze the pot with beef broth, scraping the bottom.
- Return the brisket to the pot, secure the lid, and set to cook on high pressure for 75 minutes.
- Let the pressure naturally release for 15 minutes, then manually release any remaining pressure.
- While the brisket cooks, mix BBQ sauce ingredients in a bowl and refrigerate.
- Once cooked, let the brisket rest wrapped in foil for at least 10 minutes.
- Warm the BBQ sauce in the Instant Pot using 'Saute' if desired.
- Slice the brisket against the grain and serve with BBQ sauce.
