Heirloom Tomatoes Pasta Sauce

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 medium eggplant, diced
  • 1 medium zucchini, diced
  • 1 large onion, diced
  • 5 cloves garlic, minced
  • 8 cups chopped ripe heirloom tomatoes
  • ¼ cup chopped basil leaves
  • ¼ cup chopped parsley
  • ¼ cup chopped oregano
  • 1 teaspoon brown sugar (optional)
  • to taste salt and pepper (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven and sauté eggplant, zucchini, onion, and garlic for about 5 minutes.
  2. Add the remaining ingredients, cover, and cook over medium-low heat for 1 hour, stirring occasionally until thickened.
  3. Remove from heat and allow to cool.
  4. If desired, blend the mixture for a creamier texture, or serve as is.
