Heirloom Tomatoes Pasta Sauce

Instructions
- Heat olive oil in a large pot or Dutch oven and sauté eggplant, zucchini, onion, and garlic for about 5 minutes.
- Add the remaining ingredients, cover, and cook over medium-low heat for 1 hour, stirring occasionally until thickened.
- Remove from heat and allow to cool.
- If desired, blend the mixture for a creamier texture, or serve as is.
