Spicy Salmon Bowl

Ingredients

The pickled cucumbers

  • 3 units Persian cucumbers
  • ¼ cup unseasoned rice vinegar
  • to taste none Kosher salt

The rice

  • 2 cups sushi rice or other short-grain rice

The spicy mayo

  • 3 Tbsp chili crisp
  • cup mayonnaise

The salmon

  • 12 oz salmon fillet
  • a pinch none cayenne pepper

The toppings

  • 2 units avocados
  • 3 units scallions
  • to taste none furikake, shichimi togarashi, and/or toasted sesame seeds

Instructions

  1. Combine sliced cucumbers, rice vinegar, and salt in a bowl and let sit.
  2. Cook rice with water and salt until tender, then fluff with a fork.
  3. Mix chili crisp, rice vinegar, and mayonnaise for spicy mayo.
  4. Broil salmon coated with mayonnaise and cayenne until cooked through.
  5. Assemble bowls with rice, salmon, pickled cucumbers, sliced avocados, spicy mayo, and scallions, then sprinkle with toppings.
