Instructions
- Combine sliced cucumbers, rice vinegar, and salt in a bowl and let sit.
- Cook rice with water and salt until tender, then fluff with a fork.
- Mix chili crisp, rice vinegar, and mayonnaise for spicy mayo.
- Broil salmon coated with mayonnaise and cayenne until cooked through.
- Assemble bowls with rice, salmon, pickled cucumbers, sliced avocados, spicy mayo, and scallions, then sprinkle with toppings.
