Instructions
- 1. Marinate the chicken breast with Chinese rice wine and cornstarch for 10 minutes.
- 2. Combine all sauce ingredients in a small bowl and mix well.
- 3. Heat a wok or skillet with ½ tablespoon of oil over high heat, add the chicken, and stir-fry until half-cooked.
- 4. Remove the chicken from the pan and set aside.
- 5. Heat the remaining oil in the wok, add ginger and garlic, and stir-fry until golden brown.
- 6. Stir in the fermented black beans, bell peppers, dried chili, and onion, and stir-fry until aromatic.
- 7. Return the chicken to the wok, stir for 1 minute, then add the sauce and continue stirring until the chicken is cooked through.
- 8. Season with salt to taste and serve immediately with steamed rice.
