Onion Scallion Chicken

Ingredients

The chicken and marinade

  • 8 oz boneless and skinless chicken breasts, thinly sliced
  • 1 teaspoon cornstarch
  • 1 teaspoon Chinese Shaoxing rice wine or dry sherry

The stir-fry

  • 2 tablespoon cooking oil
  • 3 stalks scallion, cut into 2-inch strips
  • ½ onion sliced
  • 1 inch ginger, peeled and sliced

The brown sauce

  • 2 teaspoon oyster sauce
  • 1 tablespoon soy sauce
  • ¼ teaspoon dark soy sauce (optional)
  • 3 dashes ground white pepper
  • ½ teaspoon sesame oil
  • 1 tablespoon sugar
  • ½ teaspoon cornstarch
  • 3 tablespoon water

Instructions

  1. Marinate the chicken with the marinade ingredients for 10 minutes.
  2. Mix all the sauce ingredients in a small bowl and set aside.
  3. Heat a wok or skillet with 1 tablespoon of cooking oil and stir-fry the marinated chicken until half cooked.
  4. Remove the chicken from the heat and set aside.
  5. Heat the remaining oil and stir-fry the onion and ginger until fragrant.
  6. Add the chicken back to the wok and stir quickly before adding the sauce.
  7. Continue to stir-fry until the chicken is fully cooked, then add the scallions.
  8. Give it a few quick stirs and serve hot with steamed rice.
