Onion Scallion Chicken

The chicken and marinade

boneless and skinless chicken breasts, thinly sliced

Chinese Shaoxing rice wine or dry sherry
The stir-fry

cooking oil

scallion, cut into 2-inch strips

ginger, peeled and sliced
The brown sauce

oyster sauce

soy sauce

teaspoon
dark soy sauce (optional)

ground white pepper

sesame oil

cornstarch

Instructions
- Marinate the chicken with the marinade ingredients for 10 minutes.
- Mix all the sauce ingredients in a small bowl and set aside.
- Heat a wok or skillet with 1 tablespoon of cooking oil and stir-fry the marinated chicken until half cooked.
- Remove the chicken from the heat and set aside.
- Heat the remaining oil and stir-fry the onion and ginger until fragrant.
- Add the chicken back to the wok and stir quickly before adding the sauce.
- Continue to stir-fry until the chicken is fully cooked, then add the scallions.
- Give it a few quick stirs and serve hot with steamed rice.
