Ginger Scallion Chicken

Ingredients

The chicken

  • 1 piece chicken breast, deboned, skinned, and cut into thin pieces
  • ½ tablespoon potato starch or cornstarch
  • 3 tablespoons oil
  • 2 inches ginger, peeled and sliced into pieces
  • 4 stalks scallions, cut into 2-inch lengths

The sauce

  • 2 tablespoons oyster sauce
  • ¼ teaspoon sesame oil
  • ½ tablespoon Shaoxing cooking wine
  • ¼ teaspoon sugar
  • 3 dashes white pepper
  • 1 teaspoon potato starch or cornstarch
  • ¼ cup water
  • to taste salt (optional)

Instructions

  1. Marinate the chicken with potato starch or cornstarch and one tablespoon of oil for 10 minutes.
  2. In a small bowl, combine all ingredients for the Ginger Scallion Sauce and mix well.
  3. Heat a wok or skillet and add the remaining oil until very hot.
  4. Add the ginger and the white parts of the scallions, stirring briefly.
  5. Add the marinated chicken and stir continuously until it starts to cook through.
  6. Pour in the Ginger Scallion Sauce and mix until the sauce thickens.
  7. Stir in the green parts of the scallions, mix quickly, and remove from heat.
  8. Serve immediately with steamed white rice.
