Ginger Scallion Chicken

scallions, cut into 2-inch lengths
The sauce

oyster sauce

sesame oil

Shaoxing cooking wine

sugar

white pepper

teaspoon
potato starch or cornstarch

salt (optional)
Instructions
- Marinate the chicken with potato starch or cornstarch and one tablespoon of oil for 10 minutes.
- In a small bowl, combine all ingredients for the Ginger Scallion Sauce and mix well.
- Heat a wok or skillet and add the remaining oil until very hot.
- Add the ginger and the white parts of the scallions, stirring briefly.
- Add the marinated chicken and stir continuously until it starts to cook through.
- Pour in the Ginger Scallion Sauce and mix until the sauce thickens.
- Stir in the green parts of the scallions, mix quickly, and remove from heat.
- Serve immediately with steamed white rice.
