Char Siu (Chinese BBQ Pork)

Ingredients

The marinade

  • ½ cup plum jam
  • ¼ cup coconut aminos
  • 3 tablespoons tomato paste
  • 1 tablespoon almond butter
  • 1 tablespoon honey (optional)
  • 1 teaspoon Red Boat fish sauce
  • ½ teaspoon Chinese five-spice powder
  • ½ teaspoon ground ginger

The pork

  • 3 pounds boneless pork shoulder roast
  • 2 teaspoons Diamond Crystal kosher salt
  • 2 scallions trimmed and thinly sliced (optional garnish)

Instructions

  1. Make the marinade by combining all marinade ingredients in a saucepan and simmering until smooth.
  2. Cool the marinade to room temperature.
  3. Prepare the pork by blotting it dry and slicing it into 2-inch strips.
  4. Sprinkle salt over the pork and marinate with the cooled sauce, reserving some for later.
  5. Refrigerate the marinated pork for 2 to 24 hours.
  6. Preheat the oven to 350°F and place the pork on a wire rack in a baking sheet.
  7. Roast for 30 minutes, flipping halfway through.
  8. Increase the oven temperature to 400°F, brush with reserved marinade, and add water to the pan.
  9. Roast for an additional 25 minutes, then flip and brush with remaining marinade.
  10. Continue roasting until charred, about 20 to 30 minutes.
  11. Rest the pork for 10 minutes, slice, and serve with garnish.
