The pork

boneless pork shoulder roast

Instructions
- Make the marinade by combining all marinade ingredients in a saucepan and simmering until smooth.
- Cool the marinade to room temperature.
- Prepare the pork by blotting it dry and slicing it into 2-inch strips.
- Sprinkle salt over the pork and marinate with the cooled sauce, reserving some for later.
- Refrigerate the marinated pork for 2 to 24 hours.
- Preheat the oven to 350°F and place the pork on a wire rack in a baking sheet.
- Roast for 30 minutes, flipping halfway through.
- Increase the oven temperature to 400°F, brush with reserved marinade, and add water to the pan.
- Roast for an additional 25 minutes, then flip and brush with remaining marinade.
- Continue roasting until charred, about 20 to 30 minutes.
- Rest the pork for 10 minutes, slice, and serve with garnish.
