Char Siu Chicken

The chicken

Umami Stir Fry Powder or Diamond Crystal kosher salt

avocado oil
The sauce

cup
plum jam or peach or apricot jam, sweetened only with fruit juice

coconut aminos

tomato paste

almond butter or tahini

teaspoon
Red Boat fish sauce

teaspoon
Chinese five spice powder

ground ginger
Instructions
- Preheat the oven to 400°F on convection mode or 425°F conventional mode.
- Pat the chicken dry and season with Umami Stir-Fry Powder or salt, then toss with avocado oil.
- Arrange the chicken on a wire rack in a baking sheet.
- Bake the chicken for 15 minutes.
- While the chicken is baking, mix the sauce ingredients in a bowl until smooth.
- After 15 minutes, flip the chicken smooth-side up and brush ⅔ of the sauce on top.
- Bake for an additional 5 to 7 minutes, rotating the tray halfway through.
- If desired, broil for 2 to 3 minutes for extra browning.
- Remove from the oven, let it rest, and slice before serving.
