Char Siu Chicken

Ingredients

The chicken

  • pounds boneless, skinless chicken thighs
  • teaspoons Umami Stir Fry Powder or Diamond Crystal kosher salt
  • 1 tablespoon avocado oil

The sauce

  • ¼ cup plum jam or peach or apricot jam, sweetened only with fruit juice
  • 2 tablespoons coconut aminos
  • tablespoons tomato paste
  • teaspoons almond butter or tahini
  • 1 teaspoon Red Boat fish sauce
  • ¼ teaspoon Chinese five spice powder
  • ¼ teaspoon ground ginger

Instructions

  1. Preheat the oven to 400°F on convection mode or 425°F conventional mode.
  2. Pat the chicken dry and season with Umami Stir-Fry Powder or salt, then toss with avocado oil.
  3. Arrange the chicken on a wire rack in a baking sheet.
  4. Bake the chicken for 15 minutes.
  5. While the chicken is baking, mix the sauce ingredients in a bowl until smooth.
  6. After 15 minutes, flip the chicken smooth-side up and brush ⅔ of the sauce on top.
  7. Bake for an additional 5 to 7 minutes, rotating the tray halfway through.
  8. If desired, broil for 2 to 3 minutes for extra browning.
  9. Remove from the oven, let it rest, and slice before serving.
