Ingredients

The chicken

  • 1 lb bone-in chicken thighs
  • 2 cloves garlic, minced

The Char Siu Sauce

  • 2 pieces Chinese fermented red bean curd (optional)
  • 1 tablespoon honey
  • 1 tablespoon shaoxing wine or rice wine
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon dark soy sauce
  • 1 teaspoon five-spice powder
  • ¼ teaspoon white pepper powder
  • 3 ½ oz sugar

Instructions

  1. Debone the chicken thighs, keeping the skin on.
  2. Mix all the Char Siu sauce ingredients in a bowl until well combined.
  3. Add the minced garlic and chicken to the sauce, stirring to coat thoroughly.
  4. Preheat the oven to 400°F (200°C).
  5. Place the chicken on a lined baking sheet and roast for 20 minutes until the skin is charred.
  6. Slice the chicken into pieces, sprinkle with sesame seeds, and serve with steamed rice, using the drippings.
