Ingredients

The Muffin Batter

  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ cup granulated white sugar
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ¾ cup milk
  • ½ tsp almond extract
  • cup vegetable or canola oil
  • 1 large egg, beaten

Toppings

  • cup sliced almonds, divided

Instructions

  1. Preheat the oven to 400°F and grease 12 muffin tins or line them with baking cups.
  2. In a medium bowl, whisk together the flour, cocoa powder, sugar, baking powder, salt, and ⅓ cup of sliced almonds.
  3. In a separate large bowl, whisk together the milk, almond extract, oil, and beaten egg.
  4. Add the dry ingredients to the wet ingredients and stir just until combined, avoiding overmixing.
  5. Fill the muffin cups about ⅔ full and sprinkle a pinch of sliced almonds on top, pressing them lightly into the batter.
  6. Bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean.
