Date Night Mushroom Fettuccine

Ingredients

The sauce

  • ½ cup Land O Lakes® Butter, divided
  • 2 cloves fresh minced garlic
  • 16 ounces fresh sliced mushrooms
  • 1 cup heavy whipping cream
  • 1 teaspoon salt
  • fresh ground black pepper
  • parsley for topping

The pasta

  • 1 pound fettuccine
  • ½ cup Parmesan cheese
  • 1 cup reserved pasta water

Instructions

  1. Clean the mushrooms and sauté them with garlic and 2 tablespoons of butter until soft and brown.
  2. Add the cream and remaining butter to the skillet and simmer over low heat.
  3. Cook the fettuccine according to package directions, drain, and return to the pot.
  4. Combine the mushroom sauce with the hot fettuccine, tossing to mix.
  5. Add Parmesan and reserved pasta water to achieve the desired consistency, then season with salt and pepper.
  6. Serve hot, topped with parsley and additional pepper.
