Ingredients

The pasta and oil

  • ¼ cup extra-virgin olive oil

The aromatics

  • 2 medium garlic cloves, thinly sliced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

The mushrooms

  • 8 ounces cremini mushrooms

The herbs and spices

  • to taste thyme
  • to taste pepper flakes (optional)

The liquid

  • to taste brandy

Instructions

  1. Boil 3 quarts of water in a large pot.
  2. In a skillet, heat olive oil, garlic, half of the thyme, and pepper flakes over medium heat until the garlic is golden brown.
  3. Add sliced mushrooms, salt, and black pepper to the skillet and cook until the mushrooms are browned.
  4. Remove from heat and add brandy, then return to heat and cook until the liquid is syrupy.
