Shaved Fennel and Avocado Salad

Parmigiano-Reggiano or Pecorino Romano cheese
Instructions
- Soak the currants in vinegar and hot water, then set aside.
- In a large bowl, combine fennel, fronds, asparagus or snap peas, onion, and parsley. Season with salt and pepper.
- Add olive oil and lemon juice, then toss and adjust seasoning to taste.
- Drain the currants and add them along with the avocado to the bowl. Toss gently.
- Shave cheese on top to taste, adjust seasonings if necessary, and serve.
