Shaved Fennel and Avocado Salad

Ingredients

The salad

  • 2 bulbs fennel
  • ¼ cup fennel fronds
  • ¼ lb. asparagus or snap peas
  • ½ small red onion
  • ¼ - ½ cup parsley
  • 1 avocado avocado

The dressing

  • 1 tablespoon dried currants
  • splash white balsamic vinegar
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • to taste salt
  • to taste freshly cracked pepper
  • to taste Parmigiano-Reggiano or Pecorino Romano cheese

Instructions

  1. Soak the currants in vinegar and hot water, then set aside.
  2. In a large bowl, combine fennel, fronds, asparagus or snap peas, onion, and parsley. Season with salt and pepper.
  3. Add olive oil and lemon juice, then toss and adjust seasoning to taste.
  4. Drain the currants and add them along with the avocado to the bowl. Toss gently.
  5. Shave cheese on top to taste, adjust seasonings if necessary, and serve.
