Cream Cheese Pecan Cookies

Instructions
- Cream together butter, cream cheese, granulated sugar, and salt until smooth.
- Mix in vanilla extract and scrape down the sides of the bowl.
- Gradually add flour while mixing on low speed until just combined.
- Mix in 1 cup of small chopped pecans.
- Spread dough out in the bowl and freeze until firm, about 20-30 minutes.
- Divide dough into 3 equal portions and shape into logs.
- Roll logs in pecans to cover and wrap in plastic wrap.
- Chill logs in the freezer for 30 minutes or in the fridge for 3 hours.
- Preheat oven to 350°F and line baking sheets with parchment paper.
- Slice logs into 12 slices each and bake until just set, about 13-16 minutes.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
