Cream Cheese Pecan Cookies

Ingredients

The dough

  • 1 cup unsalted butter
  • 1 pkg. cream cheese
  • cups granulated sugar
  • ¼ tsp salt
  • 2 tsp vanilla extract
  • cups unbleached all-purpose flour

The pecans

  • 2 cups Fisher Pecan Halves

Instructions

  1. Cream together butter, cream cheese, granulated sugar, and salt until smooth.
  2. Mix in vanilla extract and scrape down the sides of the bowl.
  3. Gradually add flour while mixing on low speed until just combined.
  4. Mix in 1 cup of small chopped pecans.
  5. Spread dough out in the bowl and freeze until firm, about 20-30 minutes.
  6. Divide dough into 3 equal portions and shape into logs.
  7. Roll logs in pecans to cover and wrap in plastic wrap.
  8. Chill logs in the freezer for 30 minutes or in the fridge for 3 hours.
  9. Preheat oven to 350°F and line baking sheets with parchment paper.
  10. Slice logs into 12 slices each and bake until just set, about 13-16 minutes.
  11. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
