Quiche Ingredients

  • 1 recipe pie crust
  • 1 Tbsp. olive oil
  • 3 handfuls fresh baby spinach
  • 1 small white or yellow onion
  • 1 medium red bell pepper
  • 5–10 spears asparagus
  • 6 eggs
  • ¾ cup unsweetened almond milk
  • 3 Tbsp. all-purpose flour
  • ½ tsp. baking powder
  • ½ tsp. salt
  • ½ tsp. sweet paprika
  • ½ tsp. dried thyme
  • ¼ tsp. chipotle powder
  • tsp. black pepper

Dairy-Free Pie Crust Ingredients

  • ½ cup vegan butter or shortening
  • ½ tsp. salt
  • 1 cup all-purpose flour
  • 3–4 Tbsp. ice water

Instructions

  1. Preheat the oven to 350°F.
  2. Prepare the pie crust and blind bake it for 10 minutes.
  3. In a sauté pan, heat olive oil and sauté onions, red bell pepper, and asparagus until the onions are translucent.
  4. In a large bowl, whisk together eggs, flour, baking powder, almond milk, salt, paprika, thyme, chipotle powder, and black pepper.
  5. Stir in the sautéed vegetables and fresh spinach until combined.
  6. Pour the mixture into the partially baked pie crust and smooth the top.
  7. Bake for 45-50 minutes until set and a toothpick comes out clean.
  8. Let the quiche set for 5 minutes before slicing and serving.
