Instructions
- Preheat the oven to 350°F.
- Prepare the pie crust and blind bake it for 10 minutes.
- In a sauté pan, heat olive oil and sauté onions, red bell pepper, and asparagus until the onions are translucent.
- In a large bowl, whisk together eggs, flour, baking powder, almond milk, salt, paprika, thyme, chipotle powder, and black pepper.
- Stir in the sautéed vegetables and fresh spinach until combined.
- Pour the mixture into the partially baked pie crust and smooth the top.
- Bake for 45-50 minutes until set and a toothpick comes out clean.
- Let the quiche set for 5 minutes before slicing and serving.
