Whipped Goat Cheese Dip with Maple Spiced Sweet Potatoes

Ingredients

The sweet potatoes

  • 1 large sweet potato, diced
  • 2 tbsp maple syrup
  • 2 tbsp olive oil
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp salt
  • ½ tsp ground pepper
  • ¾ cup Sante Nuts Sweet & Spicy Pecans, chopped

The baguette

  • 1 unit baguette
  • to taste tbsp olive oil

The whipped goat cheese

  • ½ cup goat cheese
  • 1 cup crumbled feta cheese
  • 1 tbsp lemon juice
  • ¼ cup greek yogurt

The garnish

  • 1 tbsp minced fresh dill
  • 1 tbsp minced fresh mint
  • 1 tbsp minced fresh basil
  • 2 tbsp chili crunch
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F.
  2. Dice the sweet potatoes and mix them on a parchment-lined baking sheet with maple syrup, olive oil, garlic powder, onion powder, salt, pepper, and chopped pecans.
  3. Roast the sweet potatoes for 25-30 minutes until tender.
  4. Slice the baguette into 1-inch thick slices and brush with olive oil.
  5. Toast the baguette slices in the oven for 10 minutes, flipping halfway through.
  6. In a food processor, whip the feta, goat cheese, lemon juice, and Greek yogurt until smooth.
  7. Transfer the whipped cheese to a serving dish.
  8. Once the sweet potatoes are done, let them cool slightly, then scoop them over the whipped goat cheese.
  9. Drizzle with chili crunch and olive oil, and top with fresh herbs.
  10. Serve with the crispy baguette.
