Ingredients

The sweet potatoes

  • 3 lbs sweet potatoes

The mix-ins

  • ½ cup fat free half and half
  • 3 tablespoons light butter
  • 2 oz goat cheese
  • ½ teaspoon rubbed sage
  • to taste salt
  • to taste pepper

Instructions

  1. 1. Boil the cubed sweet potatoes in a pot of water until tender, about 10-12 minutes.
  2. 2. Drain the sweet potatoes and return them to the pot or place them in a large bowl.
  3. 3. Combine the half and half and butter in a bowl and microwave for one minute.
  4. 4. Mash the half and half and butter mixture into the sweet potatoes until smooth.
  5. 5. Stir in the goat cheese, sage, salt, and pepper until well combined.
  6. 6. Optionally, use an immersion blender or hand mixer for a smoother texture.
