Goat Cheese Mashed Sweet Potatoes

Instructions
- 1. Boil the cubed sweet potatoes in a pot of water until tender, about 10-12 minutes.
- 2. Drain the sweet potatoes and return them to the pot or place them in a large bowl.
- 3. Combine the half and half and butter in a bowl and microwave for one minute.
- 4. Mash the half and half and butter mixture into the sweet potatoes until smooth.
- 5. Stir in the goat cheese, sage, salt, and pepper until well combined.
- 6. Optionally, use an immersion blender or hand mixer for a smoother texture.
