Creamy Goat Cheese Horseradish Mashed Potatoes

prepared horseradish (not the sauce)

Instructions
- 1. Boil the diced potatoes in a large pot of water over medium-high heat for 15-20 minutes until tender.
- 2. While the potatoes are cooking, heat a non-stick skillet over medium-high heat and add grape seed oil and pancetta.
- 3. Sauté the pancetta until slightly browned, about 4-6 minutes, then remove and place on a paper towel-lined plate.
- 4. Once the potatoes are cooked, drain them and return to the pot.
- 5. Add milk, goat cheese, minced garlic, horseradish, salt, and pepper to the potatoes and mash to your desired consistency.
- 6. Stir in the cooked pancetta and sliced green onions, then serve.
