Creamy Goat Cheese Horseradish Mashed Potatoes

Ingredients

The potatoes

  • 2 lbs. red potatoes, diced (skin on)

The dairy and flavorings

  • ½ cup 2% milk
  • 4 oz. goat cheese, softened
  • 1 clove garlic, minced
  • 2 tablespoons prepared horseradish (not the sauce)
  • 1 tablespoon grape seed oil

The toppings

  • 3 oz. pancetta, diced
  • ¼ cup green onions, sliced

Seasoning

  • to taste salt & pepper

Instructions

  1. 1. Boil the diced potatoes in a large pot of water over medium-high heat for 15-20 minutes until tender.
  2. 2. While the potatoes are cooking, heat a non-stick skillet over medium-high heat and add grape seed oil and pancetta.
  3. 3. Sauté the pancetta until slightly browned, about 4-6 minutes, then remove and place on a paper towel-lined plate.
  4. 4. Once the potatoes are cooked, drain them and return to the pot.
  5. 5. Add milk, goat cheese, minced garlic, horseradish, salt, and pepper to the potatoes and mash to your desired consistency.
  6. 6. Stir in the cooked pancetta and sliced green onions, then serve.
