Creamy Ricotta Mashed Potatoes
Ingredients
The potatoes

potatoes, peeled and cut into 2 inch chunks
The flavor base

garlic, very finely minced or microplaned
The creamy elements

milk (2% or whole, can use heavy cream)

ricotta cheese
Seasoning

salt (more to taste)

pepper (more to taste)
Instructions
- 1. Place potatoes in a large saucepan, cover with water, and salt the water. Bring to a boil and cook until soft, about 10 minutes.
- 2. Drain the potatoes in a colander and set aside.
- 3. In the same pan, melt butter over low heat, then add garlic and cook for 2-3 minutes.
- 4. Remove from heat and stir in milk, ricotta, salt, and pepper.
- 5. Return the potatoes to the pan and whip until smooth. Adjust seasoning to taste.
- 6. Serve with melted butter and chives if desired.
