Creamy Ricotta Mashed Potatoes

Ingredients

The potatoes

  • lbs potatoes, peeled and cut into 2 inch chunks

The flavor base

  • tbsp butter
  • 3 cloves garlic, very finely minced or microplaned

The creamy elements

  • ¼ cup milk (2% or whole, can use heavy cream)
  • ¾ cup ricotta cheese

Seasoning

  • 1 tsp salt (more to taste)
  • ¼ tsp pepper (more to taste)

Instructions

  1. 1. Place potatoes in a large saucepan, cover with water, and salt the water. Bring to a boil and cook until soft, about 10 minutes.
  2. 2. Drain the potatoes in a colander and set aside.
  3. 3. In the same pan, melt butter over low heat, then add garlic and cook for 2-3 minutes.
  4. 4. Remove from heat and stir in milk, ricotta, salt, and pepper.
  5. 5. Return the potatoes to the pan and whip until smooth. Adjust seasoning to taste.
  6. 6. Serve with melted butter and chives if desired.
