Instructions
- Preheat the oven to 450°F and line two baking sheets with parchment paper.
- Arrange sweet potato rounds on one baking sheet, drizzle with 1 tbsp olive oil, and season with salt and pepper, then toss to coat.
- On the second baking sheet, place grapes, drizzle with 1 tsp olive oil, and season with salt and pepper, tossing to coat.
- Bake both the sweet potatoes and grapes for 20-25 minutes, rotating the sweet potato pan halfway through, until the grapes burst and the sweet potatoes are tender.
- While baking, toast the pecans in a small pan over medium heat for about 7 minutes until golden and fragrant.
- Transfer the sweet potato rounds to a serving plate and top each with goat cheese, roasted grapes, toasted pecans, dried thyme, and a drizzle of honey.
