Sweet Potato Goat Cheese Bites with Roasted Grapes

Ingredients

The base

  • 2 medium sweet potatoes
  • 1 tbsp + 1 tsp Extra Virgin Olive Oil

The toppings

  • 4 oz Truffle Goat Cheese Log
  • 2 cups Organic Red Seedless Grapes
  • ¼ tsp Thyme Leaves (optional)
  • cup Chopped Pecans
  • to taste Salt and Black Pepper
  • drizzle Wildflower Honey

Instructions

  1. Preheat the oven to 450°F and line two baking sheets with parchment paper.
  2. Arrange sweet potato rounds on one baking sheet, drizzle with 1 tbsp olive oil, and season with salt and pepper, then toss to coat.
  3. On the second baking sheet, place grapes, drizzle with 1 tsp olive oil, and season with salt and pepper, tossing to coat.
  4. Bake both the sweet potatoes and grapes for 20-25 minutes, rotating the sweet potato pan halfway through, until the grapes burst and the sweet potatoes are tender.
  5. While baking, toast the pecans in a small pan over medium heat for about 7 minutes until golden and fragrant.
  6. Transfer the sweet potato rounds to a serving plate and top each with goat cheese, roasted grapes, toasted pecans, dried thyme, and a drizzle of honey.
