Baked Goat Cheese Bites with Fire Roasted Sauce

Ingredients

Goat Cheese Bites

  • ¼ cup pistachios
  • ¼ cup Panko bread crumbs
  • ½ tsp garlic powder
  • ½ tsp oregano
  • to taste salt
  • to taste pepper
  • 4 oz plain goat cheese
  • 1 large egg
  • as needed baking spray

Fire Roasted Sauce

  • ¼ cup coarsely chopped fire roasted red peppers
  • ¼ cup fire roasted tomatoes
  • 1 clove garlic
  • 1 Tbsp pistachio / panko mix
  • 1 Tbsp extra virgin olive oil
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Line a baking sheet with parchment paper.
  3. Pulse the pistachios in a food processor until finely ground, then mix with Panko, garlic powder, oregano, salt, and pepper in a bowl.
  4. In a separate bowl, whisk the egg with remaining garlic powder, oregano, salt, and pepper.
  5. Cut the goat cheese into ½ ounce pieces and roll each into a ball.
  6. Coat each ball in the egg mixture, then roll in the pistachio mixture until fully coated.
  7. Place the coated balls on the baking sheet and freeze for 30 minutes.
  8. While freezing, blend the fire roasted red peppers, tomatoes, garlic, pistachio mixture, olive oil, salt, and pepper until smooth.
  9. Heat the sauce in a saucepan over medium heat until simmering, then reduce heat to low.
  10. Spray the frozen goat cheese balls with baking spray and bake for 6-8 minutes.
  11. Serve the goat cheese balls on a platter with the warm sauce and grilled baguette slices.
