Instructions
- Preheat the oven to 400°F.
- Line a baking sheet with parchment paper.
- Pulse the pistachios in a food processor until finely ground, then mix with Panko, garlic powder, oregano, salt, and pepper in a bowl.
- In a separate bowl, whisk the egg with remaining garlic powder, oregano, salt, and pepper.
- Cut the goat cheese into ½ ounce pieces and roll each into a ball.
- Coat each ball in the egg mixture, then roll in the pistachio mixture until fully coated.
- Place the coated balls on the baking sheet and freeze for 30 minutes.
- While freezing, blend the fire roasted red peppers, tomatoes, garlic, pistachio mixture, olive oil, salt, and pepper until smooth.
- Heat the sauce in a saucepan over medium heat until simmering, then reduce heat to low.
- Spray the frozen goat cheese balls with baking spray and bake for 6-8 minutes.
- Serve the goat cheese balls on a platter with the warm sauce and grilled baguette slices.
