Baked Goat Cheese with Tomato Sauce

Instructions
- Preheat the oven to 375°F.
- Warm olive oil in a medium saucepan over medium heat, then sauté onion for 3 minutes.
- Add garlic, red pepper flakes, 1 tablespoon of fresh basil (or dried), and oregano, and sauté for 1 minute.
- Stir in white wine vinegar and sauté for another minute.
- Add crushed tomatoes, salt, and black pepper, then simmer for 10 minutes.
- Spoon the sauce into baking dishes and add dollops of goat cheese on top.
- Bake for about 15 minutes until the cheese is warmed through, optionally broil for a couple of minutes to brown the cheese.
- Let cool slightly, then garnish with remaining basil and a drizzle of olive oil before serving with bread.
