The pasta

  • 8 ounces short-cut pasta noodles

The main ingredients

  • 1 log goat cheese (4 to 5 ounces)
  • 4 medium cloves garlic
  • 1 can (15 ounces) chickpeas
  • 2 pints (4 cups) cherry tomatoes
  • ½ cup Kalamata olives (optional)
  • cup extra-virgin olive oil
  • to taste salt
  • to taste freshly ground black pepper
  • a pinch red pepper flakes (optional)
  • cup fresh basil (thinly sliced)

Instructions

  1. Preheat the oven to 425°F and boil salted water for the pasta.
  2. Cook the pasta according to package directions, then drain and rinse.
  3. In a baking dish, place the goat cheese in the center and arrange garlic, chickpeas, tomatoes, and olives around it.
  4. Drizzle with olive oil and season with salt, pepper, and red pepper flakes.
  5. Bake for 20 minutes, then stir the mixture and bake for an additional 12 to 15 minutes.
  6. Smash the roasted garlic and mix it with the tomatoes and cheese.
  7. Combine the tomato mixture with the pasta and adjust seasoning as needed.
  8. Garnish with fresh basil and serve warm or at room temperature.
