Ingredients

The pasta

  • 10 ounces penne pasta

The sauce

  • 2 large avocados
  • 2 ounces goat cheese
  • 2 cloves garlic
  • Juice of 1 lemon
  • ΒΌ cup basil leaves
  • to taste salt
  • to taste black pepper

The garnish

  • 1 cup grape tomatoes

Instructions

  1. 1. Boil water in a large pot and salt it, then cook the pasta until al dente, about 8-10 minutes.
  2. 2. While the pasta cooks, prepare the sauce by blending avocados, goat cheese, garlic, lemon juice, and basil in a food processor until smooth.
  3. 3. Season the sauce with salt and black pepper to taste.
  4. 4. Drain the pasta and transfer it to a large bowl.
  5. 5. Mix the avocado goat cheese sauce with the pasta until well coated.
  6. 6. Add the halved grape tomatoes and serve.
