Baked Goat Cheese in Fresh Herb and Tomato Sauce

Instructions
- Blend the petite tomatoes, white onion, crushed red pepper, oregano, basil, and Parmesan in a small blender until chunky.
- Heat olive oil in a small sauté pan and cook the minced garlic until fragrant.
- Add the chunky tomato sauce to the pan, stir, and let it simmer for 5-7 minutes.
- Pour the sauce into a small, oven-safe dish and top with goat cheese.
- Broil until the cheese is browned, about a couple of minutes.
- Serve hot with garlic rubbed crostinis.
