Baked Goat Cheese in Fresh Herb and Tomato Sauce

Ingredients

The sauce

  • 1 cup petite cut tomatoes with olive oil and garlic
  • 2 Tbsp. white onion, chopped
  • ½ Tbsp. fresh Italian oregano leaves
  • 1 Tbsp. fresh basil leaves
  • ¼ tsp. crushed red pepper flakes
  • 2 Tbsp. Parmesan, freshly grated from block
  • 1 Tbsp. extra virgin olive oil
  • 1 clove garlic, minced
  • to taste salt and pepper

The cheese

  • ¼ cup goat cheese

For serving

  • garlic rubbed crostinis

Instructions

  1. Blend the petite tomatoes, white onion, crushed red pepper, oregano, basil, and Parmesan in a small blender until chunky.
  2. Heat olive oil in a small sauté pan and cook the minced garlic until fragrant.
  3. Add the chunky tomato sauce to the pan, stir, and let it simmer for 5-7 minutes.
  4. Pour the sauce into a small, oven-safe dish and top with goat cheese.
  5. Broil until the cheese is browned, about a couple of minutes.
  6. Serve hot with garlic rubbed crostinis.
