Ingredients

  • 10 ounces goat cheese at room temperature
  • cup dried cranberries
  • ¼ cup raw pecan halves
  • cup panko breadcrumbs
  • ¾ teaspoon kosher salt
  • ¼ teaspoon dried thyme
  • 1 large egg
  • to taste honey for drizzling

Instructions

  1. Prepare a baking sheet lined with parchment paper and clear space in the freezer.
  2. Mix goat cheese and cranberries in a bowl until well combined.
  3. Roll the mixture into 18 balls and place them on the baking sheet.
  4. Grind pecans in a food processor and mix with panko, salt, and thyme in a bowl.
  5. Beat the egg in a separate bowl.
  6. Roll each cheese ball in the egg mixture and then in the panko mixture, ensuring they are coated.
  7. Freeze the balls for 30 minutes.
  8. Preheat the oven to 470°F and line a baking sheet with parchment paper.
  9. Bake the cheese balls for 7 to 10 minutes until golden and crisp.
  10. Transfer to a serving plate, drizzle with honey, and serve immediately.
