Instructions
- Prepare a baking sheet lined with parchment paper and clear space in the freezer.
- Mix goat cheese and cranberries in a bowl until well combined.
- Roll the mixture into 18 balls and place them on the baking sheet.
- Grind pecans in a food processor and mix with panko, salt, and thyme in a bowl.
- Beat the egg in a separate bowl.
- Roll each cheese ball in the egg mixture and then in the panko mixture, ensuring they are coated.
- Freeze the balls for 30 minutes.
- Preheat the oven to 470°F and line a baking sheet with parchment paper.
- Bake the cheese balls for 7 to 10 minutes until golden and crisp.
- Transfer to a serving plate, drizzle with honey, and serve immediately.
