Instructions
- Toss tomatoes and cantaloupe in a bowl with salt, vinegar, and oil, then set aside.
- Line a baking sheet with parchment paper.
- Mix goat cheese, feta, basil, pepper, and garlic, then form into 16 balls.
- Wrap each ball with a slice of prosciutto and place on the baking sheet.
- Freeze the wrapped balls for 20 minutes.
- Heat oil in a pot over medium heat until hot.
- Fry the balls in batches for 30-40 seconds until prosciutto is crispy.
- Drain on paper towels and assemble skewers with a cheese ball, basil, tomato, and cantaloupe.
- Serve immediately.
