Prosciutto Wrapped Goat Cheese Balls

Ingredients

The cheese mixture

  • 300 g plain goat cheese, slightly softened
  • 115 g crumbled feta cheese
  • 2 tbsp minced fresh basil
  • 2 cloves garlic, pressed
  • ΒΌ tsp pepper

The wrapping and frying

  • 16 slices prosciutto
  • neutral oil for frying (avocado or grapeseed)

For serving

  • 16 pieces wooden appetizer skewers (about 4 inches in length)
  • 16 pieces cherry tomatoes
  • 16 pieces small pieces of cantaloupe (balled or cut in pieces)
  • salt
  • white or regular balsamic
  • olive oil
  • 16 pieces fresh basil

Instructions

  1. Toss tomatoes and cantaloupe in a bowl with salt, vinegar, and oil, then set aside.
  2. Line a baking sheet with parchment paper.
  3. Mix goat cheese, feta, basil, pepper, and garlic, then form into 16 balls.
  4. Wrap each ball with a slice of prosciutto and place on the baking sheet.
  5. Freeze the wrapped balls for 20 minutes.
  6. Heat oil in a pot over medium heat until hot.
  7. Fry the balls in batches for 30-40 seconds until prosciutto is crispy.
  8. Drain on paper towels and assemble skewers with a cheese ball, basil, tomato, and cantaloupe.
  9. Serve immediately.
