Rich and Creamy Peppermint Ice Cream

Instructions
- Heat the milk, sugar, and salt in a saucepan over medium heat until the sugar dissolves.
- Pour the heavy cream into a metal bowl set in a larger bowl of ice and set a medium sieve on top.
- Whisk the eggs in a separate bowl and temper them by slowly adding warm milk mixture while whisking.
- Pour the egg mixture back into the saucepan and cook over medium heat, stirring constantly until thickened.
- Strain the mixture into the heavy cream and whisk well, then refrigerate for 8 hours or overnight.
- Freeze the mixture in an ice cream maker according to the manufacturer's instructions, adding crushed peppermint in the last 5 minutes.
- Transfer the ice cream to an airtight container and freeze for at least an hour before serving.
