Ingredients

The base

  • ¾ cup whole milk
  • ½ cup sugar
  • teaspoon salt
  • 1 ¼ cups heavy cream
  • 2 large eggs
  • 1 ½ teaspoons peppermint extract

Add-ins

  • ¼ cup crushed peppermint candy

Instructions

  1. Heat the milk, sugar, and salt in a saucepan over medium heat until the sugar dissolves.
  2. Pour the heavy cream into a metal bowl set in a larger bowl of ice and set a medium sieve on top.
  3. Whisk the eggs in a separate bowl and temper them by slowly adding warm milk mixture while whisking.
  4. Pour the egg mixture back into the saucepan and cook over medium heat, stirring constantly until thickened.
  5. Strain the mixture into the heavy cream and whisk well, then refrigerate for 8 hours or overnight.
  6. Freeze the mixture in an ice cream maker according to the manufacturer's instructions, adding crushed peppermint in the last 5 minutes.
  7. Transfer the ice cream to an airtight container and freeze for at least an hour before serving.
