Ingredients

The salad

  • 1 cup green lentils, cooked
  • 3 cups cooked quinoa
  • 1 large carrot, peeled and grated
  • 1 large red bell pepper, cored and diced
  • 1 bunch scallions, chopped
  • ½ cup dried cranberries

The dressing and toppings

  • ½ cup balsamic vinegar dressing
  • 1 cup walnuts, chopped and toasted

Instructions

  1. Combine lentils, quinoa, carrot, red pepper, scallions, and cranberries in a large bowl.
  2. Toss the mixture with the desired amount of balsamic dressing.
  3. Top with walnuts.
  4. Serve chilled or at room temperature.
