Instructions
- Make coconut butter by processing dried, unsweetened shredded coconut in a food processor for about 20 minutes.
- Set aside 1 cup of the coconut butter and store the rest in a jar.
- Add roasted peanuts to the food processor and process until smooth and creamy.
- Incorporate the reserved coconut butter and flaxseed meal, processing for about 30 seconds.
- Add coconut shavings, Brazil nuts, pumpkin seeds, and dried cranberries, pulsing a few times to blend.
- Transfer the mixture to a clean jar, seal tightly, and enjoy.
