Ingredients

The base

  • 1 cup coconut butter
  • 2 cups raw peanuts, roasted

Add-ins

  • 2 tbsp flaxseed meal
  • 2 tbsp unsweetened coconut shavings
  • 50 g Brazil nuts, roughly chopped
  • 50 g pumpkin seeds
  • 50 g dried cranberries

Instructions

  1. Make coconut butter by processing dried, unsweetened shredded coconut in a food processor for about 20 minutes.
  2. Set aside 1 cup of the coconut butter and store the rest in a jar.
  3. Add roasted peanuts to the food processor and process until smooth and creamy.
  4. Incorporate the reserved coconut butter and flaxseed meal, processing for about 30 seconds.
  5. Add coconut shavings, Brazil nuts, pumpkin seeds, and dried cranberries, pulsing a few times to blend.
  6. Transfer the mixture to a clean jar, seal tightly, and enjoy.
