Instructions
- Preheat the oven to 350°F and prepare a muffin tin with cooking spray.
- Mash the bananas in a large bowl, then mix in the maple syrup, egg, melted coconut oil, and vanilla.
- Add the almond flour, oat flour, oats, ½ cup of coconut, salt, and baking soda, and stir until just combined.
- Pour the batter into the muffin tin and top with the remaining ¼ cup of coconut.
- Bake for 18-22 minutes, or until a knife comes out clean.
