Ingredients

  • 1 cup mashed overripe bananas
  • ¼ cup pure maple syrup
  • 1 large egg
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 1 cup oat flour
  • ½ cup rolled oats
  • ¾ cup shredded unsweetened coconut
  • ½ tsp fine sea salt
  • ¾ tsp baking soda

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin with cooking spray.
  2. Mash the bananas in a large bowl, then mix in the maple syrup, egg, melted coconut oil, and vanilla.
  3. Add the almond flour, oat flour, oats, ½ cup of coconut, salt, and baking soda, and stir until just combined.
  4. Pour the batter into the muffin tin and top with the remaining ¼ cup of coconut.
  5. Bake for 18-22 minutes, or until a knife comes out clean.
