Summer Roll Rice Noodles

Ingredients

The steak

  • 12 oz. New York strip steak
  • to taste N/A Kosher salt

The sauce

  • 3 N/A limes
  • 4 cloves garlic
  • ½ cup peanut butter
  • ¼ cup soy sauce
  • 2 Tbsp. fish sauce
  • 2 Tbsp. pure maple syrup
  • 2 Tbsp. water

The vegetables

  • 1 medium carrot
  • 1 N/A Persian cucumber

The noodles

  • 1 lb. dried wide rice noodles

The herbs

  • 1 cup mixed tender herbs

The oil

  • 1 Tbsp. vegetable oil

Instructions

  1. Pat the steak dry and season with salt; let sit for 10 minutes.
  2. In a bowl, combine lime juice, garlic, peanut butter, soy sauce, fish sauce, maple syrup, and water; whisk until smooth.
  3. Mix carrot and cucumber in a bowl, add lime juice, and toss.
  4. Heat a skillet, rub the steak with oil, and cook until browned on both sides and at desired doneness; let rest.
  5. Cook rice noodles in boiling water until tender, then drain and rinse with cold water.
  6. Slice the steak, serve with peanut sauce, noodles, carrot mixture, and herbs.
