Instructions
- Pat the steak dry and season with salt; let sit for 10 minutes.
- In a bowl, combine lime juice, garlic, peanut butter, soy sauce, fish sauce, maple syrup, and water; whisk until smooth.
- Mix carrot and cucumber in a bowl, add lime juice, and toss.
- Heat a skillet, rub the steak with oil, and cook until browned on both sides and at desired doneness; let rest.
- Cook rice noodles in boiling water until tender, then drain and rinse with cold water.
- Slice the steak, serve with peanut sauce, noodles, carrot mixture, and herbs.
