Healthy Vegan Buddha Bowl with Peanut Sauce

Instructions
- Preheat the oven to 400°F.
- Cook the rice according to package directions.
- On a baking sheet, place chickpeas, broccoli, and carrots. Toss with olive oil, salt, and pepper.
- Roast the vegetables for 25 minutes, stirring halfway through.
- Meanwhile, prepare the peanut sauce.
- Assemble the bowls by placing rice at the bottom, topping with the roasted veggies and peanut sauce.
