Healthy Vegan Buddha Bowl with Peanut Sauce

Ingredients

The Bowl

  • 1 can chickpeas, drained and rinsed
  • 1 large head broccoli, chopped (florets only, 4 cups)
  • 5-6 medium carrots, chopped (2 heaping cups)
  • 2-3 cups cooked brown rice
  • 2 tbsp extra virgin olive oil
  • to taste Kosher salt and freshly ground black pepper
  • optional chopped green onions, sesame seeds

The Peanut Sauce

  • 1 batch Restaurant-worthy peanut sauce

Instructions

  1. Preheat the oven to 400°F.
  2. Cook the rice according to package directions.
  3. On a baking sheet, place chickpeas, broccoli, and carrots. Toss with olive oil, salt, and pepper.
  4. Roast the vegetables for 25 minutes, stirring halfway through.
  5. Meanwhile, prepare the peanut sauce.
  6. Assemble the bowls by placing rice at the bottom, topping with the roasted veggies and peanut sauce.
