Whipped Cottage Cheese with Balsamic Strawberries

full fat cottage cheese (about 2 cups)

Instructions
- Heat olive oil in a frying pan and sauté minced garlic for a few minutes.
- Add strawberries, balsamic glaze, and honey to the pan and cook on medium-low for 8-10 minutes until strawberries are coated but still hold their shape.
- Remove from heat and allow to cool.
- In a food processor, blend cottage cheese and salt on high until smooth and creamy.
- Once strawberries have cooled, layer the cottage cheese on a plate or bowl and spoon the strawberries on top.
- Garnish with basil and serve with crackers or crostini.
