Ingredients

Whipped Ricotta Cream

  • 2 cups part skim or whole milk ricotta cheese
  • 2 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract

Balsamic Strawberries

  • 2 cups strawberries, halved
  • ¼ cup balsamic vinegar
  • ¼ cup pure maple syrup
  • 1 teaspoon vanilla extract

Maple Glazed Seeded Nuts

  • cups mixed whole nuts (pistachios, almonds, cashews, pecans)
  • 2 tablespoons sunflower seeds or pepitas
  • 2 tablespoons chia seeds or flax seeds
  • 3 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Make the ricotta cream by blending ricotta cheese, maple syrup, and vanilla until smooth, then refrigerate.
  2. Prepare the balsamic strawberries by boiling strawberries with balsamic vinegar and maple syrup, then remove strawberries and thicken the sauce.
  3. Toast the nuts and seeds in a skillet, then mix with maple syrup and vanilla, and let cool.
  4. Assemble by layering strawberries, ricotta cream, and nuts in bowls, and drizzle with balsamic syrup.
