Maryland Crab Cakes

Ingredients

  • cup mayonnaise
  • 1 large egg
  • 2 teaspoons Dijon mustard
  • ½ teaspoon hot sauce
  • 1 teaspoon lemon juice
  • ½ teaspoon Old Bay seasoning
  • 2 tablespoons green onions, sliced
  • 1 pound lump crab meat
  • 1 cup saltine crackers, crushed
  • as needed optional lemon wedges and remoulade sauce for serving
  • as needed optional cooking spray

Instructions

  1. Whisk together mayonnaise, egg, Dijon mustard, hot sauce, lemon juice, and Old Bay seasoning in a bowl.
  2. Stir in the sliced green onions.
  3. In a separate bowl, combine the crab meat and crushed crackers gently.
  4. Pour the crab mixture into the mayonnaise mixture and toss gently to coat.
  5. Cover and chill the mixture in the refrigerator for at least 1 hour.
  6. Preheat the oven to 450°F (232°C) and coat a sheet pan with cooking spray.
  7. Form the chilled crab mixture into 8 equal-sized patties.
  8. Place the patties on the prepared sheet pan and bake for 8-10 minutes until golden brown and cooked through.
  9. Serve immediately with lemon wedges and remoulade sauce if desired.
