Maryland Crab Cakes

Instructions
- Whisk together mayonnaise, egg, Dijon mustard, hot sauce, lemon juice, and Old Bay seasoning in a bowl.
- Stir in the sliced green onions.
- In a separate bowl, combine the crab meat and crushed crackers gently.
- Pour the crab mixture into the mayonnaise mixture and toss gently to coat.
- Cover and chill the mixture in the refrigerator for at least 1 hour.
- Preheat the oven to 450°F (232°C) and coat a sheet pan with cooking spray.
- Form the chilled crab mixture into 8 equal-sized patties.
- Place the patties on the prepared sheet pan and bake for 8-10 minutes until golden brown and cooked through.
- Serve immediately with lemon wedges and remoulade sauce if desired.
