Instructions
- Mix together the eggs, mayo, mustard, lemon juice, pepper, Old Bay, and bread crumbs.
- Gently fold in the crab meat, being careful not to break it up too much.
- Cover the mixture with plastic wrap and refrigerate for 2 hours or overnight.
- Form the crab mixture into 8 equal patties, handling gently.
- Preheat the oven to 400 degrees.
- Heat a cast iron skillet over medium heat and add a coating of oil.
- Add the crab cakes to the pan and cook for 5 minutes without flipping.
- Transfer the skillet to the oven and bake for another 13-14 minutes until firm and golden brown.
