Greek Moussaka

Ingredients

The eggplant and potatoes

  • 3 medium eggplants
  • 6 large yellow potatoes
  • to taste ml olive oil
  • to taste g salt
  • to taste g pepper
  • 2 tbsp shredded parmesan cheese

The meat sauce

  • tbsp olive oil
  • 2 white onions diced
  • lbs lean ground beef
  • 4 cloves garlic
  • ½ cup red wine
  • tsp salt
  • 1 tsp ground pepper
  • 1 tsp ground cinnamon
  • ¼ tsp ground cloves
  • 1 tbsp dried basil
  • ¾ tsp ground all spice
  • 3 leaves bay leaves
  • cups diced or whole canned tomatoes
  • ½ tbsp sugar
  • 1 tbsp tomato paste
  • 1 cup water

The bechamel

  • 2 large eggs
  • 6 cups whole milk
  • 7 tbsp all purpose flour
  • 4 tbsp unsalted butter
  • tsp salt
  • ½ tsp pepper
  • ¼ tsp ground nutmeg
  • tsp ground nutmeg
  • ½ cup grated parmesan cheese

Instructions

  1. Preheat the oven to 375°F and grease two large nonstick sheet pans with olive oil.
  2. Slice the eggplants into 1/3-inch rounds, sprinkle with salt, and let sit for 10 minutes.
  3. Slice the potatoes into 1/4-inch rounds, place them on one of the sheet pans, drizzle with olive oil, salt, and pepper, and bake for 15 minutes.
  4. Drain and pat dry the eggplant, place it on the second sheet pan, drizzle with olive oil, salt, and pepper, then bake for 35-40 minutes until golden brown.
  5. In a large pot, heat olive oil over medium-high heat and cook diced onions, ground beef, and garlic until no juices remain.
  6. Deglaze with red wine, then add spices, tomatoes, sugar, tomato paste, and water, and simmer until thickened.
  7. In a separate pot, warm milk and whisk in flour gradually, then add butter, salt, pepper, and nutmeg until smooth.
  8. Remove from heat and whisk in parmesan and eggs, then set aside.
  9. In a greased 9x13 baking dish, layer the cooked potatoes, then eggplant, sprinkle with parmesan, add meat sauce, and top with bechamel.
  10. Drizzle with olive oil and bake for 40-45 minutes until golden brown, then cool for at least an hour before serving.
