Birria Quesadillas

Ingredients

  • 2 tablespoons butter
  • 2 large flour tortillas
  • ¼ cup birria broth
  • ¾ cup Oaxaca cheese
  • ¾ cup birria meat
  • 1 unit jalapeno, thinly sliced

Instructions

  1. Heat a skillet over medium heat.
  2. Melt one tablespoon of butter in the skillet, then dip the tortilla in the birria liquid until soaked.
  3. Place the soaked tortilla in the skillet and sprinkle half of the cheese on top.
  4. Add half of the birria meat and jalapenos on the cheese.
  5. Once the cheese starts melting, fold the tortilla in half.
  6. Cook for 3 minutes on each side until golden brown and crispy.
  7. Repeat the process with the second tortilla and serve warm.
