Ingredients

The filling

  • 4 cups birria meat
  • 2 cups birria broth
  • 12 large corn tortillas
  • 3 cups Oaxaca cheese or mozzarella cheese
  • ½ cup cilantro, finely chopped
  • ½ small onion, chopped

For frying

  • as needed oil

Condiments

  • as needed salsa
  • as needed guacamole
  • as needed fresh lime wedges

Instructions

  1. Soak the tortillas in birria broth.
  2. Heat oil in a cast iron skillet over medium heat.
  3. Add a soaked tortilla to the skillet, sprinkle with cheese, and add shredded birria meat.
  4. Fold the tortilla in half and cook both sides for 2-3 minutes until golden and crispy.
  5. Serve with cilantro and diced onions, alongside the consomé for dipping.
