Golden Raisin No Bake Energy Bites

Ingredients

The energy bites

  • 1 cup golden raisins, lightly packed
  • ½ cup walnuts or nuts of choice
  • ¼ cup rolled or quick-cooking oats
  • 2 tablespoons ground flaxseeds
  • 1 tablespoon honey
  • ¼ teaspoon vanilla extract
  • teaspoon kosher salt

The toppings

  • to taste chopped nuts
  • to taste toasted coconut flakes
  • to taste cocoa powder
  • to taste chocolate sprinkles

Instructions

  1. Soak the raisins in hot water for 5 minutes, then drain and pat dry.
  2. In a food processor, finely grind the nuts, oats, and flaxseeds.
  3. Add the drained raisins, honey, vanilla extract, and salt to the processor and pulse until a thick, sticky mixture forms.
  4. Shape the mixture into 1-inch balls.
  5. Roll each ball in desired toppings to coat.
  6. Chill the balls on a parchment-lined baking sheet until they are no longer sticky.
