Fruit and Nut Energy Bites

Ingredients

The base mixture

  • cup whole-grain Kamut flour
  • tsp baking soda
  • tsp baking powder
  • ¼ tsp sea salt
  • ½ tsp cinnamon
  • cup Sucanat or light brown sugar

The mix-ins

  • cups toasted walnuts, chopped
  • ½ cup dried cherries or cranberries
  • 12 pieces Medjool dates, pitted and chopped
  • 1 cup dried apricots, cut into bite-size pieces

The binding agents

  • 1 tbsp ground flax
  • 3 tbsp water
  • 1 tbsp almond milk
  • ½ tsp vanilla bean paste or 1 tsp pure vanilla extract

Instructions

  1. Preheat the oven to 325°F and line a square pan with parchment paper.
  2. In a small bowl, mix together the ground flax and water to create a flax egg and set aside.
  3. Chop and toast the walnuts for 8-9 minutes at 325°F, then set aside.
  4. In a large bowl, whisk together the flour, baking soda, sugar, baking powder, cinnamon, and salt.
  5. Stir in the toasted walnuts and dried fruit, ensuring they are coated with the flour mixture.
  6. After about 10 minutes, mix the vanilla into the flax egg and then add this mixture along with the almond milk to the dry ingredients.
  7. Mix everything well and spread the mixture into the prepared pan, pressing it down evenly.
  8. Bake for 33-35 minutes until golden, then cool on a wire rack for 10 minutes.
  9. Transfer back into the pan and place in the freezer for 10 minutes to set.
  10. Remove from the pan, cool for another 10 minutes, and then slice into bites.
