Instructions
- Preheat the oven to 325°F and line a square pan with parchment paper.
- In a small bowl, mix together the ground flax and water to create a flax egg and set aside.
- Chop and toast the walnuts for 8-9 minutes at 325°F, then set aside.
- In a large bowl, whisk together the flour, baking soda, sugar, baking powder, cinnamon, and salt.
- Stir in the toasted walnuts and dried fruit, ensuring they are coated with the flour mixture.
- After about 10 minutes, mix the vanilla into the flax egg and then add this mixture along with the almond milk to the dry ingredients.
- Mix everything well and spread the mixture into the prepared pan, pressing it down evenly.
- Bake for 33-35 minutes until golden, then cool on a wire rack for 10 minutes.
- Transfer back into the pan and place in the freezer for 10 minutes to set.
- Remove from the pan, cool for another 10 minutes, and then slice into bites.
