Ingredients

The base mixture

  • 8 ounces chopped dates
  • ½ cup honey
  • 1 Tablespoon chia seeds (optional)
  • 1 Tablespoon ground flax seeds
  • pinch salt

The mix-ins

  • cups old-fashioned oats (dry, not cooked)
  • 1 cup shelled pistachio nuts
  • 1 cup dried cranberries
  • cup white chocolate chips (optional)

Instructions

  1. Combine the dates, honey, chia seeds, flax seeds, and salt in a food processor and pulse until smooth.
  2. Transfer the mixture to a bowl and stir in the oats, pistachios, cranberries, and white chocolate chips until well combined.
  3. Refrigerate the mixture for at least 30 minutes to make it easier to handle.
  4. Shape the mixture into 1-inch balls or press it into a baking pan and cut into bars.
  5. Store in the refrigerator for up to 2 weeks.
