Cranberry Pistachio Energy Bites

Instructions
- Combine the dates, honey, chia seeds, flax seeds, and salt in a food processor and pulse until smooth.
- Transfer the mixture to a bowl and stir in the oats, pistachios, cranberries, and white chocolate chips until well combined.
- Refrigerate the mixture for at least 30 minutes to make it easier to handle.
- Shape the mixture into 1-inch balls or press it into a baking pan and cut into bars.
- Store in the refrigerator for up to 2 weeks.
