Instructions
- Combine all ingredients except cranberries and coconut in a food processor or blender.
- Blend until a dough-like consistency forms.
- Transfer the dough to a bowl and stir in the cranberries.
- Place shredded coconut in a separate bowl.
- Roll the dough into ~1” balls and then roll in shredded coconut.
- If the dough isn't sticky enough, spray the balls with a little cooking spray.
- Enjoy your energy bites!
