Coconut Cranberry Energy Bites

Ingredients

The base

  • cup almonds
  • cup cashews
  • 8 pieces dates
  • 2 Tbsp flaxseeds or chia seeds
  • 1 Tbsp agave
  • 1 tsp vanilla extract

The mix-ins

  • ¼ cup cranberries
  • ½ cup unsweetened shredded coconut

Instructions

  1. Combine all ingredients except cranberries and coconut in a food processor or blender.
  2. Blend until a dough-like consistency forms.
  3. Transfer the dough to a bowl and stir in the cranberries.
  4. Place shredded coconut in a separate bowl.
  5. Roll the dough into ~1” balls and then roll in shredded coconut.
  6. If the dough isn't sticky enough, spray the balls with a little cooking spray.
  7. Enjoy your energy bites!
