Instructions
- Grind the walnuts and almonds in a food processor until a dough starts to form.
- Add the soaked and chopped dates, lemon juice, ¼ cup shredded coconut flakes, and salt, and process until incorporated.
- Roll the mixture into round balls using saran wrap to help form them.
- Roll the balls in the remaining ¼ cup shredded coconut flakes.
- Place the energy bites in the fridge for at least an hour before enjoying.
