Strawberry Coconut Energy Bites

Instructions
- 1. Process oats, chia seeds, cinnamon, and ¼ cup coconut in a food processor until finely ground.
- 2. Add strawberry applesauce, dates, almond butter, and vanilla; process until smooth, scraping down sides as needed.
- 3. Pour the mixture into a bowl and chill for about 1 hour.
- 4. Form the chilled mixture into small balls using your hands.
- 5. Roll each ball in the remaining ¼ cup of coconut.
- 6. Refrigerate until serving and store in an airtight container.
