Ingredients

The bites

  • 1 cup old-fashioned oats
  • 2 tablespoons chia seeds
  • ½ teaspoon cinnamon
  • ½ cup shredded coconut, unsweetened
  • 1 4-ounce container strawberry applesauce, unsweetened
  • 10 small dates, pitted
  • cup creamy almond butter (or peanut butter)
  • 1 teaspoon vanilla

For rolling

  • ¼ cup shredded coconut, unsweetened

Instructions

  1. 1. Process oats, chia seeds, cinnamon, and ¼ cup coconut in a food processor until finely ground.
  2. 2. Add strawberry applesauce, dates, almond butter, and vanilla; process until smooth, scraping down sides as needed.
  3. 3. Pour the mixture into a bowl and chill for about 1 hour.
  4. 4. Form the chilled mixture into small balls using your hands.
  5. 5. Roll each ball in the remaining ¼ cup of coconut.
  6. 6. Refrigerate until serving and store in an airtight container.
